If without ESP a vehicle is driven, in certain conditions like in highways when you are making 60+ mph/ 100+km/hr and suddenly a vehicle comes in front, the steering looses it's control and the vehicle can not stop. But if the ESP system is there it monitors the vehicle and stops automatically.

How does ESP work?
ESP monitors vehicles 25 times more, if a car is aobut to over skid or over steer and is about to loose the track then it automatically brakes on the over skidded part of tyre. system reacts immediately. Precisely, immediate braking system reacts on each wheels immediately and gets controlled.
ESP consists of following things inside:
1. speed sensor on each wheel.
2. rotation rate censor on all wheels.
3. steering angle sensor.
